Since Spine 3.8 is an older version, a version released before the availability of Mac PCs with the M1 chip and the release of MacOS 12, it is prone to crashes due to the changes made by Apple. We are aware of this problem, but we cannot update the old version of the editor, because the only way to get it to work properly on the new PCs is to release a new version of the editor. If you want to keep using 3.8, either get an older PC or use a Windows PC, as it is relatively trouble-free on Windows. Or upgrade the editor version if you prefer to use a newer Mac PC.
By the way, the hotkey error shown in the first screenshot you attached is an error that occurs if you start the newer version first and then switch to the older version, but does not cause a crash or freeze.
When launching an older version of the editor on a newer Mac PC, it has been confirmed that the editor is prone to crashing if another operation is running concurrently while waiting for it to launch, or if it crashes when moving the editor window to an external monitor. Therefore, it seems to be more stable to suspend other operations while waiting for the editor to start, and wait for the editor to start up on the Mac PC's monitor before starting actual work.
