There are a set of skel files from a mobile game complete with a png and atlas file that I wanted to open and export as an mp4 file, but it never seems to import properly. Either it gives an error telling me to make sure it's a valid file, or it says it imported successfully, but with a blank canvas. I'm not sure what version these files were exported from so I tried rolling back to the beta version closest to the game's release, but it didn't work and updated to the closest non-beta version instead. Now, I'm stuck with two questions. Is there something wrong with my skel file not being able to be imported properly, or is it because I haven't found the right version yet?

Hello, I tried to import the project in several Spine versions too, getting the same results at first.
If you downgrade Spine to v3.5.51you should be able to import the project correctly.

It was exported without nonessential data, so all the meshes may look weird once imported, having lost the internal edges, but if the source images don't have padding around them it may not be a problem.

That being said, make sure to have permission from the creators to reuse their assets. Some allow modding or the creation of fan animations, some might not appreciate it (:

I'm not entirely sure how meshes work yet, but I assume it's something I could add back once I learn how. The exported files were going to be posted on a wiki, since most of the characters don't just have a still image of their animated forms.

I know spine essential doesn't let you export a project file with professional features, but can you still export them as mp4/gifs?

Spine essential can't save or correctly load PRO features, therefore this is not something you'll be able to do.
Maybe it's best to just take a screenshot in game, or simply load the skeleton in skeleton viewer and take a screenshot of its appearance. Skeleton Viewer
